Sucrose esters are a class of substances formed through the esterification reaction between sucrose and fatty acids. Their key characteristics are as follows:
Composition: Primarily composed of a mixture of sucrose hexaesters, heptesters, and octaesters (i.e., a single sucrose molecule linked to 6–8 fatty acid chains).
Raw Materials: Production raw materials are typically derived from edible vegetable oils such as soybean oil and palm oil.
Adjustable Properties: By linking different fatty acids, their physical state can be controlled to be either solid or liquid, thereby meeting various food processing requirements.
Zero-Calorie Principle: Sucrose esters have large molecules that cannot be broken down by lipases (enzymes responsible for breaking down fats) in the human digestive tract. As a result, they are not absorbed by the body but are excreted directly through the digestive tract, providing no energy.
Sensory Properties: It closely resembles traditional cooking oils or fats in taste, texture, and cooking properties, making it ideal for use in snacks such as potato chips and popcorn to reduce fat and calorie content.
Sucrose polyester, as a food ingredient, is subject to strict regulatory oversight in various countries.
United States: Approved by the U.S. Food and Drug Administration (FDA) as a food additive; specific regulations are outlined in 21 CFR 172.8676.
China: The former Ministry of Health (now the National Health Commission) approved sucrose polyester as a new food resource (now referred to as a new food ingredient) in 2010, permitting its use in foods such as potato chips, ready-to-eat popcorn, and baked cookies.
Usage Restrictions: In China, the recommended daily intake does not exceed 3.1 grams, and it is not suitable for infants and young children. Labels must specify the intake limit and indicate for whom the product is unsuitable.
