I.Key Properties
  1. Gelling Property: This is its most important characteristic. When a sodium alginate solution comes into contact with divalent cations (especially calcium ions, except magnesium), it instantly forms a heat-stable, non-reversible gel. This gentle process, which doesn’t require heating, is known as “ionotropic gelation.”
  2. Thickening and Stabilizing: It dissolves in water to form a viscous colloid, providing excellent thickening, suspending, and emulsifying stability.
  3. Film-Forming Ability: It can form tough and transparent films.
  4. Biocompatibility and Biodegradability: It is non-toxic, harmless, biodegradable by the body, and exhibits good biocompatibility.
  5. pH Sensitivity: Under acidic conditions (pH < pKa), sodium alginate converts to water-insoluble alginic acid and precipitates.
II. Primary Uses
1. Food Industry (as Food Additive)
  • Thickener and Stabilizer: Used in ice cream, yogurt, and salad dressings to prevent ice crystal formation, improve texture, and maintain stability.
  • Gelling Agent: Used to make artificial fruit bits, jellies, and gummy candies.
  • Film Former: Used as a coating on fruits and meats for preservation and anti-microbial purposes.
2. Pharmaceutical Industry
  • Pharmaceutical Excipient:
    • Binder and Disintegrant: Used in tablet manufacturing for binding powders and controlling the disintegration rate of tablets in the body.
    • Film-Forming Material: Used to prepare microcapsules and drug coatings for controlled or targeted drug release.
  • Wound Dressings: Alginate dressings (e.g., alginate fiber ropes) are highly absorbent. They react with wound exudate to form a soft gel, providing a moist healing environment that promotes granulation tissue formation. They can be removed without damaging new tissue and are ideal for heavily exuding wounds.
  • Gastroesophageal Reflux Inhibitor: Formulated with sodium bicarbonate . Upon reacting with stomach acid, it forms a low-density, gel-like “raft” that floats on top of the stomach contents, physically blocking reflux into the esophagus and relieving heartburn.
3. Other Industries
  • Textile Printing: Used as a thickener in printing pastes to ensure sharp patterns.
  • Cosmetics and Personal Care: Used as a binder in toothpaste and a film-forming agent in face masks.
