Casein is the predominant phosphoprotein found in mammalian milk, constituting approximately 80% of total milk protein. It is a family of related phosphoproteins (αS1, αS2, β, and κ) that form three-dimensional colloidal supramolecular micelles. Casein is an amphiphilic protein with excellent emulsification, foam formation, stabilization, water-binding, and gelation properties.
Food & Beverage Industry
Casein is widely used as a food additive and functional ingredient. It serves as a stabilizer, emulsifier, and thickener in dairy products, frozen foods, baked goods, meat products, and seasonings. It is a key ingredient in protein formulations, functional blends, cheese and yogurt production, infant formula, sports nutrition products, and high-protein blends, bars, and powders. Casein is also used as a whitening or thickening agent in nondairy foods and protein supplements.
Adhesives & Binders
Casein glues are used in exterior and interior woodworking, labeling adhesives in the bottling industry, and water-based glues. Casein also functions as a binder in paper coatings, pigment and mineral binders in industrial coatings, and drug binders in the pharmaceutical industry.

Casein exhibits excellent film-forming properties and intrinsic oxygen-barrier capabilities, positioning it as a sustainable alternative to petroleum-based plastics in food packaging. Casein-based coatings, latexes, and bioplastics are being developed as environmentally friendly options. It is used in protective coatings for paper and cardboard, textile coatings, and water-resistant, biodegradable films.
