2-Methylbutyraldehyde is found naturally in black tea, elm blossom, kohlrabi, cheese, rum, roasted peanuts, etc.
Uses;
2-Methylbutyraldehyde has a strong, suffocating odor, a spicy, musty smell. When diluted, it has a unique cocoa and coffee aroma, a sweet, slightly fruity, nutty, furfural-like isovaleraldehyde, a malty, fermented aroma, and a chocolate-like flavor. It can be used to formulate daily-use and food flavorings.
Uses;
GB 2760-1996 specifies it as a permitted food flavoring. Used in flavorings for rum, chocolate, coffee, banana, bread, tomatoes, etc.
